Crumbed Veal Rib w/ Lemon Anchovy Butter
1/4 cup plain flour, 1 1/2 tablespoons olive oil, 8 (about 80g each) veal leg steaks, 3/4 cup marsala, 1 1/2 tablespoons extra light thickened cream
soak cutlet in milk for 2-4 hours
whip butter, anchovy, lemon, salt, pepper, olive oil for side garnish
dip cutlet into egg wash
mix together parsley, parma, salt, pepper & bread crumbs
cover cutlet in bread crumb mix
hot pan add butter and olive oil
pan fry both sides until golden brown
serve with anchovy butter and check of lemon
