Backstrap is prepared from a Side and consists of the eye muscle lying along the spinous and transverse processes of the lumbar, thoracic and cervical vertebrae.
We prepare our backstraps at variable lengths according to the buyer’s needs.

With its delicate flavour it is perfectly suited to lightly flavoured dishes and are delicious when marinated for a couple of hours in olive oil, grated black peppercorns and sea salt.
Veal Tartare w/ Potato Crisps
finely dice veal in a bowl
mix eggs, mustard, cornichons & capers
then add salt, pepper and oil
shots of chat potatoes
heat oil to 180 degrees
drop into oil cook until golden brown
mix though salt and spray on vinegar
