Crumbed beef ribs
4 Op Rib cutlets, 1 cup breadcrumbs, ½ cup chopped parsley, 2 tablespoons of grated parmesan, Salt & pepper to taste, 1 cup milk, 2 beaten eggs, 1 tablespoon butter, 1 tablespoon olive oil, Juice of 1 lemon
Slice meat into cutlets and pound cutlets gently
Soak cutlets in milk for 2-4 hours
Dip cutlet into egg wash
Mix together parsley, parmesan, salt, pepper & bread crumbs
Cover cutlet in bread crumb mix
Heat pan to hot pan and add butter and olive oil
Fry cutlets on each side until golden brown
